Summer Recipe: Watermelon Tomato Salad

Keep it fresh with our favorite summer salad recipe that features the iconic flavors of the season!

Crunchy watermelon, juicy tomatoes, and slightly bitter arugula come together when tossed in a mouth-watering citrus-y sour vinaigrette to satisfy all of your cravings while keeping your summer body goals in mind. 

Pair this light salad with a thirst quenching glass of watermelon lemonade – better yet, this salad is the perfect side for your next BBQ or pool party.


Prep Time: 5-10 minutes | Serving Size: 4 


  • 6 cups of watermelon, cubed
  • 2 tomatoes, cubes
  • 4 ounces of Kite Hill Soft Fresh Original, crumbled
  • 6 cups baby arugula
  • 1/4 cup orange juice
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup minced shallots
  • 1 tbsp of raw honey
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper 
  • 1/2 cup olive oil
  • Sprinkle of sesame seeds


Whisk together orange juice, lemon juice, shallots, honey, salt, and pepper. Once combined, whisk in the olive oil slowly to make the vinaigrette.

Toss the watermelon, tomatoes, arugula, and Kite Hill with the vinaigrette and top with sesame seeds.

Allow to sit for 5-10 minutes before serving.
