SUMMERTIME RECIPE: WATERMELON TOMATO SALAD
Prep Time: 5-10 minutes | Serving Size: 4
- 6 cups of watermelon, cubed
- 2 tomatoes, cubes
- 4 ounces of Kite Hill Soft Fresh Original, crumbled
- 6 cups baby arugula
- 1/4 cup orange juice
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup minced shallots
- 1 tbsp of raw honey
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 cup olive oil
- Sprinkle of sesame seeds
Whisk together orange juice, lemon juice, shallots, honey, salt, and pepper. Once combined, whisk in the olive oil slowly to make the vinaigrette.
Toss the watermelon, tomatoes, arugula, and Kite Hill with the vinaigrette and top with sesame seeds.
Allow to sit for 5-10 minutes before serving.
