Tahini is a paste made from ground sesame seeds which gives it a creamy texture. It contains more phytosterols than most nuts and seeds, which help lower cholesterol and promote heart health. Tahini Dressing Recipe
Makes 1 cup of dressing | Prep time: 10 minutes
INGREDIENTS:
- ½ cup tahini
- Juice of 1 lemon
- 1 garlic clove
- 1 inch ginger, peeled
- Pinch of cayenne pepper
- 6-8 drops liquid stevia (or 1 tsp honey, maple syrup, or agave)
- 1 tbsp olive oil
- ½ cup water
- Salt and pepper to taste
METHOD:
- Add tahini, lemon juice, garlic, ginger, cayenne, and stevia to a food processor. Pulse a few times to combine.
- While food processor is running carefully drizzle in olive oil then water through the top opening until dressing is smooth.
- Season with salt and pepper to taste. This dressing can be stored in the fridge for up to a week.
CHEF’S NOTE:
Try this creamy dressing with shredded romaine lettuce, baby kale, spinach or mixed greens. For a heartier, earthier salad, massage into shredded kale. Add your favorite crisp, raw veggies for an extra crunch!
