The Perfect Dairy & Gluten-Free Pumpkin Soup

The perfect pumkin soup that is both dairy-free and gluten-free — and convenientely packed with a healthy dose of antioxidants. Add this delicious dish to your Thanksgiving meal or next gathering! 

GLUTEN-FREE, DAIRY-FREE PUMPKIN SOUP RECIPE

Recipe serves 6-8

Ingredients:

  • 2 medium pumpkins, peeled and chopped
  • 1 large potato, peeled and chopped
  • 2 cups of organic vegetable broth
  • 1 medium white onion, chopped
  • 1 medium bunch of leeks, cut into small pieces
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp minced ginger
  • coarse sea salt and ground black pepper (to taste)
  • 1 tbsp coconut oil
  • 3 to 4 cups water
  • 1/2 cup of pumpkin seeds

Directions:

  1. Chop onion and leeks; mince ginger
  2. Saute onions and leeks in a medium frying pan with coconut oil until soft (about five minutes)
  3. Peel skin off of potato; chop
  4. Peel skin off pumpkins; cut in half; scoop out seeds; chop
  5. Place chopped potato and pumpkins into a large stock pot
  6. Add broth to pot and enough water until the potato and pumpkins are just covered
  7. Add sauteed onion and leeks, fresh ginger and spices
  8. Bring a boil, and then allow to simmer for 15 minutes
  9. Allow pot to cool for about 15 minutes
  10. Use handheld blender to mix all ingredients in pot (or place into blender) Once smooth, bring back to a medium heat and simmer for an additional 15 minutes
  11. Top with pumpkin seeds (optional)
  12. Enjoy! 

We suggest offering guests a variety of toppings to top your pumpkin soup in addition to the pumpkin seeds so they can customize their dish – like a small bowl of red pepper flakes or some fresh chives for added flavor!
