Just before and after a juice cleanse it’s important to keep your meals light and raw. Well here is your grain or rice alternative that will help you accomplish just that: cauliflower! Inspired by flavors of the Mediterranean, simply pulse your cauliflower in a food processor and you’ll find it takes on the shape and texture of your favorite grains - making for the perfect rice substitute while being non-starchy and lighter on your system.
Cauliflower has an abundance of vitamins, mineral, and fiber to keep you satisfied, and is low in calories and carb. Plus you are harnessing the benefits of raw foods! What more can you ask for? A perfect addition to your meal, try this gluten-free, dairy-free, soy-free, vegan, and delicious “rice” bowl.
To make your cauliflower substitute for rice, first cut your cauliflower into quarters and use your knife to cut the bottom stem off of each piece. Using a food processor (we liked this one), pulse the first quarter of the cauliflower until it’s broken down into tiny pieces, the size of millet. Place into a large bowl. Continue this process with the other three quarters.
For the dressing, add in a small bowl or jar, the lemon juice, olive oil, maple syrup, and cayenne pepper and whisk or shake until combined.
Lastly, add your sprouts, pumpkin seeds, parsley, cilantro, green onions, and lemon zest to the bowl with the cauliflower rice. Pour the dressing over the top and toss the mixture until combined. Add salt and pepper to taste, perhaps a lemon garnish for some flair and VOILA! Serve and enjoy!
