CURRIED quick SWEET POTATOES
Prep time: 15 minutes | Cook time: 30 minutes
Serving Size: 6
3 medium sweet potatoes, scrubbed with the skins left on
2 tbs. coconut oil, melted
2 tbs. curry powder
1 tsp. salt
Cilantro, for garnish
Lime wedges, for garnish
Preheat the oven to 400℉.
Cut the sweet potatoes into ½ inch cubes. Transfer to a bowl. Drizzle the melted coconut oil on top. Add the curry powder, salt, and a sprinkling of pepper. Toss to combine. Pour onto a baking tray and spread the potatoes out into one layer. Place in the oven.
Cook for 30 minutes, shaking the tray halfway through to ensure the potatoes are not sticking. They are done when slightly browned and tender. Remove from the oven and place onto a serving tray. Garnish with chopped cilantro and lime wedges. Serve and enjoy!
