Curried and Quick Sweet Potatoes

This recipe featuring gently baked – quick sweet potatoes, provides a hot, nourishing side dish that is great for mixing in healthy options onto the dinner table.

Starchy vegetables, like sweet potatoes, yams, and squash, are a satisfying addition to any healthy diet, especially pre- or post- cleanse. Not only are they packed with essential vitamins and minerals, but they also contain loads of fiber and plant-protein to keep you feeling full longer.

The warm spices from the curry, color pop from the sweet potatoes, and the fresh splash of lime juice all come together to create a delicious and fun meal sure to be a crowd favorite this holiday season. Spend less time in the kitchen and more time with your loved ones and make these quick sweet potatoes.


Prep time: 15 minutes | Cook time: 30 minutes

Serving Size: 6


3 medium sweet potatoes, scrubbed with the skins left on

2 tbs. coconut oil, melted

2 tbs. curry powder

1 tsp. salt


Cilantro, for garnish

Lime wedges, for garnish


Preheat the oven to 400℉.

Cut the sweet potatoes into ½ inch cubes. Transfer to a bowl. Drizzle the melted coconut oil on top. Add the curry powder, salt, and a sprinkling of pepper. Toss to combine. Pour onto a baking tray and spread the potatoes out into one layer. Place in the oven.

Cook for 30 minutes, shaking the tray halfway through to ensure the potatoes are not sticking. They are done when slightly browned and tender. Remove from the oven and place onto a serving tray. Garnish with chopped cilantro and lime wedges. Serve and enjoy!
